2008 Chardonnay(Lees Stirred)
The grapes are allowed to reach optimum flavour ripeness before being harvested. The wine is then fermented with medium solids in French oak hogsheads adding complexity and texture to ripe the fruit characters and fresh acidity. The wine is matured in oak and lees-stirred daily adding to a creaminess on the palate. Nashi pear and green apple characterise the nose and the palate, along with hints of coconut and cashew from the finely balanced oak contribution. The wine has fresh, vibrant fruit and some buttery fullness from a proportion of malo-lactic fermentation.
Only 400 dozen were made.
