2009 Rosé (Cabernet Malbec)

This 2009 Cabernet (85%), Malbec (15%) Rose was made from 100% estate sourced, dry grown Clare Valley fruit.  Low yields in 2008 and high skin : juice ratios have resulted in very intense fruit character and varietal expression.

All fruit was blended at the receival bin, destemmed and chilled to 5oC.  To achieve the desirable level of colour and flavour extraction the fruit was left on skins for 16 – 20 hours in the press.  The free-run juice and light pressings were then cold settled, racked and fermented cool to express the clean fruit characters of both the Cabernet Sauvignon and the Malbec.

The wine shows fresh raspberry and cranberry on the nose.  The palate is fresh and lively, held together by a fine structure of natural acid and soft tannin balance.  This wine is best served chilled, especially during the warmer months and is a great match for most food styles, particularly fresh seafood and contemporary Asian cuisine.
