2009 Take Two (Shiraz/Cabernet)

This is an 56:44 blend of Shiraz and Cabernet Sauvignon – all dry-grown at Skillogalee and carefully made to retain good primary fruit characters and a fine acid tannin balance and structure.  The wine was vinified in open fermenters and then basket pressed, matured in a combination of American and French oak before being bottled.  It has rich, lively fruit characters on the nose and the palate with a light touch of oak showing through.  The tannin structure is fine and soft, and there is enough natural acid to give it freshness and balance.  This is an ideal wine for early consumption, but will last well in the cellar for up to five or six years.
