2009 The Cabernets
The fruit for this wine comes from un-irrigated, hand pruned and hand picked vines grown at Skillogalee around 450m above sea level. The wine was vinified in open fermenters and then basket-pressed. No fining was needed. Malo-lactic (secondary) fermentation and maturation took place in predominantly French oak hogsheads for around 24 months, before the separate components were blended and bottled.
Vintage 2009 was a robust vintage where 100mm of rainfall received in mid-December compensated for New Years hot spell. Mild and cool ripening period from thereon in March & April resulted in ideal harvesting conditions. This Cabernet blend (Cab Sauv 87%, Malbec 11% and Cab Franc 2%) is another dark, rich wine in the Skillogalee tradition, with intense colour and powerful vibrant aromas and flavours. The wine is full and elegant with cassis, cherry fruit and black olive flavours. Fine vanillin oak and firm structural tannins add complexity and appeal to this wine. Drink now with rich red meat dishes but this vintage has a backbone of natural acidity that will repay cellaring for 10 - 12 years.
This wine was all bottled using a Stelvin screw cap closure to avoid cork taint and to ensure consistency and quality.
