Hand-crafted in small quantities, our Estate Cabernet is an aromatic and succulent blend, composed predominantly of Cabernet Sauvignon with small selections of Cabernet Franc and Malbec. Our low-yielding, dry-grown vines are more than 50 years-old and situated on the high natural contours of our single estate property in the Clare Valley. Hand pruning, hand harvesting and sustainable farming techniques ensure the purest expression of fruit and terroir are achieved from these old vines.
After cold soaking, and fermentation in small batch open tanks, the skins are gently basket-pressed and the wine is aged for up to two years in predominantly French oak hogsheads. After blending, the resulting wine not only delights the senses with its aroma and flavour, but also embodies the unique land and season in which it was produced.
