Tucked away within the Riesling vineyards surrounding the historic Skillogalee House sits a small parcel of Chardonnay that was planted more than 40 years ago.
These vines are sustainably grown and individually hand-harvested when the optimum flavour and ripeness is reached. The grapes are chilled and gently pressed before the juice is moved to a blend of new and old French oak barrels for primary and malolactic fermentation, which further integrates the fruit characters and acidity. During the maturation in barrel the wine undergoes bâtonnage, where the lees are regularly stirred to introduce textural creaminess and depth to the palate.
Skillogalee Chardonnay is only produced in limited quantities, and only in those vintages with suitable growing conditions.
