Hand-crafted and produced in limited quantities, The Cabernets is an aromatic and succulent proprietary red wine blend, predominantly composed of Cabernet Sauvignon with small selected parcels of Cabernet Franc and Malbec — all grown on our own single estate property in the Clare Valley.
The fruit for this wine comes from our low-yielding, dry-grown, hand-pruned vines grown on high contours of the Skillogalee Estate at around 450 metres above sea level. The family-owned vineyards are managed in accordance with sustainable farming techniques to ensure the most authentic expression of fruit and terroir.
After small batch vinification of each block in open fermenters, the skins were gently basket pressed and the wine matured for two years in predominantly French oak hogsheads. At the end of the oak maturation the blocks are individually blended to produce a wine which is not only beautiful and luxurious on the nose and palette, but speaks to the unique land and season in which it was produced.
